Strawberry Blueberry Tart

This past weekend, we felt a spurt of spring cleaning. Although spring is a very far thought, we (okay, really just my husband) got the itch to organize and clean. Along with recycling three of our broken electronic devices (a DVD player, VCR player and a cd player radio) at Best Buy we went through the refrigerator (as a side note, the fridge or freezer has funny smell and we can't figure out where it's coming from). In the bottom of the freezer we had some strawberries that Chloe and I picked in the summer of 2009. Hmmm.... still good? I think so! So today, I whipped up a very easy torte.
Step 1: Bake the shell.
Step 2: Line the shell with fruit. Ideally, it should fill the shell, but I didn't have that many strawberries.


Step 3: Mash the remaining fruit (about a cup of strawberries and a 1/2 cup of blueberries) in a sauce pan along with a 1/2 cup of sugar. In a small bowl, wisk 2.5 Tbls of corn starch with 1/2 cup of water. Pour water mixture in the pan and bring to a boil.


The sauce will thicken as you stir constantly. When it reaches the consistency of jam (about 3-5 minutes of boiling and stirring), turn off heat and let the mixture slightly cool.


Pour into the shell and let it cool in the fridge for at least an hour until it sets. Voila! A delicious dessert!! My plan is to serve it with some warm custard on top!
